Ingredients

  • 4 chicken breasts, boneless and skinless
  • 1/4 cup olive oil
  • 3 tablespoons balsamic vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 2 bell peppers, sliced (red and yellow)
  • 1 zucchini, sliced
  • 1 red onion, sliced

Instructions

  1. In a mixing bowl, combine the olive oil, balsamic vinegar, minced garlic, oregano, salt, and pepper. This will be your marinade.
  2. Add the chicken breasts to the marinade, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes (up to 4 hours) for maximum flavor.
  3. While the chicken is marinating, preheat your wood pellet grill to 375°F (190°C).
  4. After marinating, remove the chicken from the fridge and let it come to room temperature for about 10-15 minutes.
  5. Prepare the vegetables by tossing them in a bit of olive oil, salt, and pepper.
  6. Once the grill is heated, place the marinated chicken on the grill grates and close the lid. Grill for about 6-8 minutes on one side before flipping.
  7. Add the seasoned vegetables to the grill during the last 10 minutes of cooking. Grill until the chicken reaches an internal temperature of 165°F (75°C) and the vegetables are tender.
  8. Once grilled to perfection, remove everything from the grill and let the chicken rest for a few minutes.
  9. Slice the chicken and serve alongside the grilled vegetables for a delightful meal that showcases amazing wood-fired flavors!

Enjoy this delicious recipe, and don’t forget that the key is in the smoky essence brought by the wood pellets, making every mouthful a delightful experience!
