- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1 cup whipped topping
- 1 can cherry pie filling
Instructions:
- Preheat your oven to 350°F (175°C). Grab a muffin tin and line it with cupcake liners for easy serving.
- In a mixing bowl, combine graham cracker crumbs, 2 tablespoons of sugar, and melted butter. Stir it up until everything is well combined.
- Press about 1 tablespoon of the crumb mixture into the bottom of each cupcake liner to form a crust. Bake for about 5-7 minutes or until lightly golden, then let them cool.
- While the crust cools, in another bowl, beat together the softened cream cheese, 1/2 cup sugar, and vanilla extract until smooth and creamy.
- Gently fold in the whipped topping into the cream cheese mixture until it’s fully combined.
- Once the crusts are cool, spoon the cream cheese mixture into each crust, filling them to the top. Put them in the fridge for at least 2-3 hours to set up nice and firm.
- When you’re ready to serve, top each cheesecake with a generous spoonful of cherry pie filling.
