Danish Wedding Cookies
These cookies are often associated with weddings and celebrations, but they’re delicious enough to enjoy anytime. Let’s get started!
Ingredients:
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 cup finely chopped nuts (walnuts or pecans work well)
- Extra powdered sugar for rolling
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Add in the vanilla extract, mixing well.
- Gradually stir in the flour and mix until just combined. Be careful not to overmix!
- Fold in the chopped nuts until evenly distributed in the dough.
- Using your hands, roll the dough into small balls, about 1 inch in diameter, and place them on an ungreased baking sheet about 2 inches apart.
- Bake in the preheated oven for 15-20 minutes, or until the bottoms are lightly golden. Do not let them brown on top.
- Once baked, remove them from the oven and let them cool slightly for about 5 minutes.
- While they are still warm, roll the cookies in powdered sugar, making sure to coat them well.
- Let the cookies cool completely on a wire rack, and just before serving, roll them in powdered sugar again for an extra sweet touch.
