  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 red or yellow squash, diced
  • 1 cup mushrooms, sliced
  • 2 cups spinach or kale, chopped
  • 1 jar (about 25 oz) marinara sauce
  • 1 cup cashews, soaked and drained
  • 1 cup unsweetened almond milk
  • 1 tablespoon nutritional yeast
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles according to the package instructions. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add the onion and garlic and sauté until fragrant and translucent.
  4. Stir in the bell pepper, zucchini, squash, and mushrooms. Cook until softened, then add the spinach or kale until wilted. Season with salt, pepper, and Italian seasoning.
  5. In a blender, combine the soaked cashews, almond milk, nutritional yeast, salt, and black pepper. Blend until creamy and smooth.
  6. To assemble the lasagna, spread a layer of marinara sauce at the bottom of a baking dish. Layer 3 lasagna noodles, followed by half of the sautéed vegetables, half of the cashew cream, and a layer of marinara sauce. Repeat the layering process, ending with marinara sauce on top.
  7. Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes until bubbly.
  8. Let it cool for a few minutes, sprinkle with fresh basil if you like, and serve warm.
